Nourishing Banana Oat Pancakes

These wholesome pancakes are packed with nutrients and flavour, making them a perfect start to your day. They also make great snacks for any time of day. Light, fluffy, and naturally sweetened with bananas, they’re a hit with kids and adults alike!

Makes approx 8-10

Ingredients

  • 2 bananas
  • 2 eggs
  • ½ cup organic oats
  • 1 tbsp psyllium husk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 3 tsp Odi Smoothie Booster
  • A squeeze of lemon
  • A pinch of salt


Method

  1. Blend the Ingredients:
    Place all the ingredients into a blender and blitz until the mixture is completely smooth.
  2. Heat the Pan:
    Heat a frying pan over medium heat and add a little butter or olive oil.
  3. Cook the Pancakes:
    Spoon dollops of the pancake mixture into the pan. Cook until small bubbles appear on the surface, then flip and cook the other side until golden brown.
  4. Serve and Enjoy:
    Serve warm with your favourite toppings our Odi boosted chia jam, a dollop of yogurt, or a drizzle of honey, or all of the above!
