Cookies with Boosted Chia Jam

These delightful, nutrient dense cookies combine the nutty richness of almond meal and the subtle sweetness of maple syrup, topped with a dollop of nutrient-packed Boosted Odi Chia Jam. Perfect for afternoon tea or a wholesome snack!

Makes approx 25 cookies 

Ingredients

  • 2 cups (300 g) buckwheat flour
  • 1 ½ cups (180 g) almond meal (ground almonds)
  • 1 tsp cinnamon
  • ¾ cup (180 ml) maple syrup or runny honey 
  • ½ cup (125 ml) light olive oil 
  • 1 x sachet Odi Blooming Blueberry + Chia Pudding 
  • cup (110 g) Boosted Chia Jam

Method

  1. Preheat and Prepare:
    Preheat your oven to 180°C (350°F). Line two cookie trays with baking paper.
  2. Make the Dough:
    In a large bowl, combine the buckwheat flour, almond meal, cinnamon, maple syrup, olive oil and Norish Blooming Blueberry Chia Pudding sachet. Mix until the ingredients are well incorporated and come together into a dough. 
  3. Shape the Cookies:
    Take tablespoons of the mixture, roll them into balls, and place them onto the prepared trays. Space the cookies evenly, leaving 2–3 cm between each one.
  4. Add the Jam:
    Use your thumb to make an indentation in the centre of each cookie. Spoon 1 tsp of Boosted Chia Jam into each indentation. Jam Recipe Here.
  5. Bake and Cool:
    Bake the cookies for 14–16 minutes or until golden and crisp. Allow them to cool slightly on the trays before transferring them to a wire rack to cool completely.
  6. Serve and Enjoy:
    Enjoy these delicious cookies with your favourite drink or as a nourishing treat any time of day.
  7. Storage: Store in an airtight container in the fridge or cupboard for up to a few days.
