Baby-Led Weaning Blueberry Pancakes

Soft, fluffy and naturally sweetened with banana, these simple pancakes are perfect for little hands learning to self-feed. Made with just a handful of wholesome ingredients, they're nutrient-dense, freezer-friendly and loved by babies, toddlers and older children alike.

Makes: 14 little pancakes
Cook time: 10 minutes

Ingredients

  • 1 ripe banana

  • 2 eggs

  • ½ tsp baking powder

  • 2 - 4 Tbsp Odi Organic Baby Cereal

  • A handful of fresh or frozen blueberries

To Serve

  • Plain yoghurt

  • Extra blueberries

Method

  1. Place the banana in a bowl and mash thoroughly until smooth.

  2. Add the baking powder and Odi Organic Baby Cereal and mix well. Alternatively, place everything in a blender and blend until smooth.

  3. Crack in the eggs and mix again. Add a little more Odi Organic Baby Cereal if needed to create a thick batter. The amount required will depend on the size of your banana and eggs.

  4. Fold through the blueberries.

  5. Heat a little butter in a frying pan over medium heat.

  6. Spoon dollops of batter into the pan and cook for 2–3 minutes on each side, or until golden brown and cooked through. Be careful not to have the pan too hot, as the pancakes can burn before the centre is cooked.

To Serve

Serve plain, or with a dollop of natural yoghurt and a few extra blueberries on top.

Tip: These pancakes freeze beautifully, making them perfect for busy mornings, lunchboxes and healthy snacks on the go.
