
Creamy, vibrant and bursting with berry goodness, this simple and nutrient dense chia pudding makes a nourishing breakfast, snack or healthy dessert. Rich in fibre, healthy fats and wholefood nutrition, it's an easy make-ahead recipe that's perfect for busy mornings.

Ingredients

400ml coconut milk

4 Tbsp chia seeds

1–2 tsp honey or maple syrup

½ tsp vanilla extract

⅔ cup frozen raspberries, lightly crushed
Method

Add the coconut milk, chia seeds, Odi Organic Smoothie Booster, honey or maple syrup and vanilla extract to a jar or container.

Mix well for 1–2 minutes until the chia seeds are evenly distributed throughout the liquid.

Add the crushed raspberries and stir again until combined.

Set aside to thicken for at least 15–20 minutes, stirring once or twice during this time to prevent the chia seeds from clumping.

Alternatively, cover and refrigerate overnight for a thicker pudding.
To Serve
Serve with your favourite fresh fruit, muesli or granola, or enjoy simply as it is.
Tip: Make a double batch and keep it in the fridge for an easy grab-and-go breakfast or snack throughout the week. Perfect for lunchboxes, in a little container with some fresh fruit.
