Ingredients
- 1 brown onion (finely diced)
- 1 carrot (finely diced)
- 2 sticks of celery (finely diced)
- 1 head broccoli (finely chopped)
- 600g beef mince
- 3 garlic cloves (crushed)
- 2 tsp mixed herbs
- ¼ cup tomato paste
- 2 tsp Dijon mustard
- 1 tsp coconut sugar
- 1 tsp per serve Odi Organic Meal Booster
- 1 tsp per serve Odi Organic Bone Broth
- 3 ½ cups water (divided)
- 1 cup orzo
- Parmesan cheese (to serve)
- Salt and pepper
- Olive oil
Method
1. In a large sauté pan or another large pan with a lid, add the onion, carrot, and celery with some olive oil, plus a good pinch of salt and pepper. Cook over medium-high heat for 5-10 minutes, or until the vegetables have softened and caramelised.
2. Add the broccoli to the other vegetables and sauté for 5 minutes.
3. Add a little more olive oil if needed, then add the mince, salt and pepper. Break it apart and cook until browned and all the moisture has evaporated, about 7 minutes.
4. Add the garlic and mixed herbs and stir through.
5. Add the tomato paste, mustard, coconut sugar, meal booster and bone broth. Stir through and add 1 cup of water. Simmer with the lid on for 10 minutes to help develop the flavour.
6. Once the liquid is almost gone, add the orzo and stir through the mince. Add the remaining 2 ½ cups of water, bring to a simmer, then reduce the heat to medium-low. Cover with a lid and allow the orzo to cook for 10 minutes, stirring a couple of times to prevent it from sticking to the pan
7. Serve topped with Parmesan.
