
Rich, nourishing, and deeply satisfying. These loaded nachos are packed with flavour, hidden vegetables, and wholesome ingredients the whole family will love.

For the loaded mince

600g beef mince

2 carrots, grated

2 celery stalks, finely diced

2 medium onions, finely diced

3 garlic cloves, minced

1 tsp Odi Organic Meal Booster

2 tsp Odi Organic Bone Broth

2 cans chopped tomatoes

1 can kidney beans

1 litre water

Sea salt and black pepper

1 square dark chocolate

2 tbsp tomato paste
For the salsa

1 punnet cherry tomatoes, halved or quartered
-
1/4 red onion, finely diced
-
A handful of fresh coriander, chopped
-
Juice of 1/2 lime
-
A drizzle of olive oil

Sea salt and black pepper
To serve

2 bags of your favourite corn chips

1 cup grated cheese (or more)

1 cup guacamole (or more)

1/2 cup sour cream (or more)
Method
- To make the loaded mince, sauté the onion and garlic in a little oil until softened but not browned. Add the beef mince and cook until lightly coloured and all the liquid has evaporated.
- Add the grated carrot and celery, then sprinkle over the Odi Organic Bone Broth and Meal Booster. Stir well to combine.
- Add the chopped tomatoes, kidney beans, water, tomato paste, and dark chocolate. Bring to a simmer, then reduce the heat and allow to bubble gently until thickened and rich. Stir occasionally as it cooks down.
- Once ready, the mince should be thick, glossy, and a deep rich brown. Season well with sea salt and black pepper to taste.
- To make the salsa, combine the cherry tomatoes, red onion, and coriander in a bowl. Squeeze over the lime juice, drizzle with olive oil, then season with salt and pepper. Stir well and set aside.
- To serve, spread corn chips onto a plate or platter and spoon over the hot loaded mince. Top with grated cheese, guacamole, sour cream, and fresh salsa.
- Alternatively, spread the corn chips onto an oven tray, top with cheese, and bake until melted and bubbling. Serve hot with the loaded mince and toppings alongside. Both ways are delicious.
