Iron-Rich Banana Waffles

If mornings in your house are a race against the clock (with a fussy toddler or two), these iron-rich banana waffles are about to become your new best friend.

We've folded Odi Organic Smoothie Booster straight into the batter because getting extra iron, veggies and wholefood goodness into your little ones shouldn't mean a fight at the breakfast table. Mixed into these waffles, it's completely undetectable - just a fluffy waffle with ripe banana folded through for natural sweetness and extra fibre.

The best part? This is a one-bowl, no-fuss recipe you can easily cook with little hands getting involved. Mash, whisk, pour and cook these in under 15 minutes, and easily doubled for meal prep or freezer waffles on busy weeks. A sneaky win for you, a delicious breakfast for them.

Ingredients (for 4 waffles)

  • 1⅛ cups flour of your choice (we used wholemeal spelt)
  • 1 tsp baking powder
  • ¼ cup melted butter
  • 1 egg
  • 1 tsp organic vanilla bean extract
  • 1 ripe banana
  • 1 tsp of Odi Organic Smoothie Booster per serve

Instructions

  • Preheat waffle machine
  • Mash banana in a bowl
  • Add wet ingredients and whisk (melted butter, egg, vanilla)
  • Add dry ingredients (flour, baking powder, Odi Organic Smoothie Booster) and fold in gently
  • Grease waffle machine surface, add batter (adjust to size)
  • Cook until lightly brown, rest on wire rack (not stacked) to stay crisp
  • Serve hot with your favourite toppings

Tips

  • Room-temp egg is nice but not essential
  • Don't over-mix - small lumps are fine
  • Batter should be lightly runny, if it feels too thick, add a splash of milk of your choice
  • Wire rack keeps waffles crisp
  • The ripe banana naturally provides a sweet taste, top with honey or maple sirup if you are craving more sweetness
