Boosted zucchini, bacon & cheese slice

A simple savoury zucchini slice packed with nitrate-free bacon and tasty cheese and boosted with Odi Organic Meal Booster and Odi Organic Bone Broth. Easy to make, great for lunchboxes and perfect for making ahead and freezing.

Prep time: 15 minutes
Cook time: 35–45 minutes

Ingredients

  • 6 large eggs

  • 1 cup plain flour

  • 1 tsp baking powder

  • 2 tbsp Odi Organic Meal Booster

  • 2 tsp Odi Organic Bone Broth

  • 1 small to medium onion, finely diced

  • 500 g zucchini/courgette, grated

  • 100 g grated cheese

  • 100 g nitrate-free bacon, finely diced (optional)

Method

Preheat the oven to 180°C. Line a medium baking dish or slice tin with baking paper.

Whisk the eggs together in a large mixing bowl.

Add the flour, baking powder, Odi Organic Meal Booster and Odi Organic Bone Broth and whisk to combine. Don't worry about a few small lumps; they will disappear during cooking.

Finely dice the onion and add it directly to the egg mixture. There’s no need to precook it; it will soften and become lovely and sweet as the slice cooks.

Add the grated zucchini, cheese and diced nitrate-free bacon and mix everything together until well combined.

Pour the mixture into the prepared baking dish and spread it out evenly.

Bake for 50-55 minutes, or until golden on top and completely set through the centre.

Allow to cool for 10–15 minutes before slicing.

Freezer tip: Once completely cool, cut into individual portions and freeze in an airtight container. Defrost overnight in the fridge or pop a frozen piece straight into a lunchbox in the morning to thaw naturally.
